A creamy and sweet Strawberry and Lime Ice Cream. I enjoy off a shake however the ice cream properly comes through after 7 days

 

The ice cream base is made up of Liquid Barn (LB) Vanilla ice cream, a creamy and lightly buttery Vanilla ice cream, much like a soft scoop ice cream, at 4% this gives the base ice cream note, however I find this a little 'flat' on it's own as it lacks a little depth and not enough of a vanilla punch for me so I have paired it with JF Bavarian cream to enhance those creamy notes with a thick authentic bavarian cream mouthfeel and taste at 1.5% this adds just the right amount of creaminess and mouthfeel to fill out the LB VIC cream, to boost the Vanilla VT French Vanilla Ice Cream is layered in this gives more of a fresh vanilla bean taste to this with a very slight cream boost, although most of the cream is provided by JF Bav. Cream & LB VIC. 

The toppings are provided by VT Glazed Strawberry a strong and syrupy, sweet strawberry ideal for this type of profile pushed up to 3.5% this gives an unmistakable strawberry taste strong enough to balance out the sweet and tangy lime notes of VT Persian Lime, one of the best limes on the market, used at 1% as this is a strong flavouring, I also didn't want this overwhelming the strawberry and taking away from the Ice Cream.  Finally a sweet boost is provided by TFA Sweetener used at 0.5% which gives this profile the sweeteness needed.
