I've been working on and off to create this for around 2 years. I decided to return to working on it because it's Autumn (maple season). My maple cream cookie, a buttery shortbread sandwich cookie filled with a rich maple cream.
After asking for some assistance from friends on VCC I got alot of great suggestions. I had started with a base of Ella's shortbread as the cookie base, though I had to make some adjustments to it including changing the AP from TPA to VTA @.25. The VTA has a better presence at lower % than TPA. Also I dropped the original Cap Vanilla Custard and INW Shisha Vanilla as they muted the maple flavor too much and replaced them with FW Vanilla Butternut. The Vanilla Butternut is a light/med cream with nutty/maple notes. I kept the original Cap Sugar Cookie but switched to JF Biscuit as its more buttery than INW Biscuit.
For the rich maple cream I was using a heavy combo of TFA Maple syrup, FA Maple Syrup and FLV Maple Bar, but I switched that to 1.5 FA Maple with 1% FA Butterscotch to boost the fullness of the FA Maple. To create the thick cream center of the cookie I added FLV Frosting. I did think of using WF Buttercream or VTA Vanilla Buttercream, but I gave away my WF and the VTA seemed to mute the maple too much. I used PUR SS as a sweetener but I may change to VTA Golden Syrup as it seems more of a sticky sweet corn syrup as ss might make the maple sickenly sweet.
