Sweet and tart rhubarb and the slightly bitter and earthy notes of walnuts are a match made in heaven and a perfect early autumn profile.
I experimented quite a bit with different rhubarbs and walnuts and found this combination and ratios to be the most satisfying. The cream takes the edges off the rhubarb and the walnuts and the waver and cookie flavours bind it all together.
It tastes okay right after mixing it up but it gets so much better if you let it sit for a couple of days. The rhubarb just needs a little time to find its place in the mix and the walnut infuses the cream instead of laying on top of it after about five days of homogenisation.
