I wanted a Rhubarb crumble with a difference this is it. A deconstructed crumble and custard. Tested on a profile 1.5 0.13ohm ni80 mesh at approx 80w.
The custard base;
Inawera Custard is the main custard here used at 2% for that slight biscuit note it has to enhance other parts of the recipe. Inw Creme brulee at 0.8% thickens this up and adds some underlying sweetness from the brulee topping (more sugar like to me than fully caramelised sugar), JF Bavarian cream then adds more cream to the mix whilst the gelatin like notes of the bavarian part further helps to thicken slightly.
The filling;
CAP Cranberry used as the main cramberry as I wanted a slightly sweet, lightly tart more juice like cranberry, more like a cranberry jus to play with VTA Rhubarb Compote this for me is a more sweet and lightly caramel like rhubarb, at 2.5% it comes through beautifully giving a sweet and lightly tart rhubarb enhanced a little from the tartness of the CAP Cranberry.
Finally WF Crumble topping gives a crumble taste like it has been crumbled throughout the mix (deconstructed part) the slight biscuit note from INW Custard just helps to add more biscuit notes to 'crisp' this up.
